Sushi rice

2 cups sushi rice (yes, you need to get the good stuff)
1/2 cup rice vinegar
1 Tbs sugar
1/2 tsp sea salt

Important: Rinse the rice until water runs clear

 

cook rice according to directions on package
while it's cooking combine vinegar, sugar and salt and stir

when the rice finishes and is still hot pour mixture over rice and stir to combine.

let it cool enough to handle and then

make some awesome sushi

Dumplings (or potstickers)

make the mix for the lettuce wraps (on previous page)

add 2 to 4 Tbs finely sliced green onion

mix together and place 1 to 2 Tbs on 3x3 wonton wrapper

fold over to form a triangle and seal edges with water

(egg wash not necessary)

add 2 to 3 Tbs water to a hot pan, add your dumplings

(3 or 4 for this amount of water)

Cover and let steam, when the water is gone add 1 Tbs oil and fry off dumplings until crispy on both side.

remove and wait until they cool to eat. They will be lava hot.
