Guacamole

The secret to good guac starts with the avocados. If they aren't ripe, your guac will never be great. be patient and make it when they are ready, not before.

 

If you can't wait to have avocado try dicing up one that is a bit too firm and add it to your salsa or pico. It will be a nice addition and work better than trying to make guac out of an avocado that isn't totally ready.

This is all variable and up to you. Feel free to change and add or leave out things as you desire.

Basic recipe
one ripe avocado
1/2 a lime juiced
salt and pepper to taste.

mash it up with a fork and you have a basic guac.

 

If you want to get more interesting add

dices tomato to taste
green onion sliced thin to taste
chopped cilantro to taste (I like a lot)

Feeling spicy?
add jalapeno - with or without seeds
Teddy W. added Cumin to his and it was good
cayenne pepper
chipotle peppers

it's up to you.
