Brown Butter Perogies

Eggroll wrappers


mashed potato (left over is good)

     this is a good use for potato flakes as well.

season potato to taste you can add anything you like.

EXAMPLES

dill and lemon
chili flake
pepper
cheese and pepper
Montreal steak seasoning
roasted red pepper and garlic

dirty gym socks
use your imagination

cut eggroll wrappers into 4 parts (about 3x3)

fill center with 1.5 Tbs potato mixture

seal edges with water and use fork to lightly crimp the edges.

(this should look like a stuffed ravioli)

boil until it floats (about 2 to 3 minutes)

finish in a frying pan with butter and caramelized onions.
