Homemade Gnocchi....mmmmm

  1. One cup Mashed potato flakes (prepared without milk or salt)

  2. One cup all purpose flour

  3. One egg yolk (optional)

  4. Combine 1 cup mashed potato, flour and egg in a large bowl. Knead until dough forms a ball. Shape small portions of the dough into long "snakes". On a floured surface, cut snakes into half-inch pieces. The less you work the dough the more tender your pasta will be, so be gentle. 

  5. Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 1 to 3 minutes or until gnocchi have risen to the top; drain and serve with brown butter and garlic confit or your favorite sauce.

  6. Garnish with herbs and cheese if desired.
