Homemade Empanadas

Pie dough

1/4 cup flour

2 Tbs salted butter (cold)

1/4 tsp cider vinegar

1 Tbs ice water (approx)

Combine the dry ingredients with the butter using your finger tips. Work quickly to keep the butter cold. It will form little shards of dough. Add half the water and combine. Turn it out on a floured surface. Kneed in flour and water as needed. You may not use all the water. Kneed only as long as it takes to bring the dough together.

Wrap in plastic and put in the fridge for at least 30 min.

While its chilling make your filling.

There is no limit to filing possibilities. You could use the Bistro sloppy joe mix, taco filling, refried beans and cheese, banana and caramel, ham and cheese, strawberry jam and cream cheese (with a bit of powdered sugar and vanilla in it) Use your imagination and the skills you learned at the Bistro.

Once the dough is chilled, roll it out thin on a floured surface. It should be about the size of a plate. Don't worry if its not perfectly round, you can trim it once its filled.

Fill one side and fold over the other, covering your filling. Close your pastry using a fork to press the edges or twist them together. 

Bake at 350 for approx 30 min.
