Lonely Cat lady Alfredo

Set noodles to boil. Any kind will work, don't forget to salt the water.

1 Tbs Butter
2 Tbs Heavy cream
1 clove garlic confit
Parsely to taste
pepper to taste
pinch cayenne pepper to taste
2 Tbs Parmesan cheese
optional small cuts of Broccoli

mix butter and cream in bowl
crush in Garlic
add pepper and cayenne
add broccoli here if you like it soft

Microwave 1 minute

add parsley and Parmesan cheese
add broccoli here if you prefer it firm 
(the heat from cooking the sauce will gently cook the broccoli if its cut into bite size pieces)

when the noodles are ready (anywhere from 6 to 10 minutes for dry pasta)

 

DO NOT DRAIN THEM. Use tongs or a slotted spoon to add the past directly to the sauce. The small amount of water that transfers to the sauce will help emulsify the sauce and coat the pasta.

 

If your sauce is too thick you can always add a little more of the pasta water to help thin it out. Pasta absorbs liquid as it sits, so if your sauce is a little thin just wait a minute or two and it will thicken up.
