Pizza Dough

4 cups bread flour
1 1/2 cups warm water (110 degrees)
1 tsp instant dry yeast (1/2 if on long rise)
4 tsp sugar
2 tsp salt
4 tsp olive oil (after flour hydrates)

add water, flour, yeast, sugar and salt
mix and let stand for 5 minutes
add oil and knead for 10 full minutes


cover and rest 10 minutes
divide into 4 to 8 pieces

(depending on how big you want your pizza to be)

now for the raising part
you have two choices

1. raise for one hour at room temperature
or
2. or raise overnight in the fridge. when ready to use pull out at least one hour before you plan on using it. Let it sit in a warm space.

 

you can use this same dough to make pretzels.

Preheat oven to 450 degrees

Take your raised dough, split into 6 to 8 parts, and form pretzel shape. Youtube has great tutorials on how to shape these.

boil the formed pretzels in 10 cups of water with 2/3 cup baking soda dissolved in it. boil for about 30 seconds each. 

place on a tray and brush with butter and large salt crystals.

bake for about 12 min, they should be nice and dark brown.

you can also wrap dough around a hot dog and boil then bake, making a really good pretzel dog.
