Chana Masala (Indian chick peas)

2 Tbs chopped onion
1 Tbs chopped red pepper
1 Tbs grated or spiralized carrots
optional - jalapeno to taste
1 Tbs olive oil

In a frying pan, cook veg until soft.

then add

1 Tbs butter
1 tsp chana masala seasoning mix
2 cloves garlic confit

add butter and wait for it to stop foaming and begin to brown

add mix and garlic.

 

Cook 1 to 2 minutes to wake up the spice mix and cook down the garlic.

 

add 1/4 crushed tomato and cook until brick red

stir in 1/4 to 3/4 cups cooked chickpeas (depending on how much sauce you want)

cook until warm

eat and be happy
